1 c. butter-flavored shortening
1 c. creamy peanut butter
2 c. packed brown sugar
4 egg whites
1 tsp. vanilla
2 c. all-purpose flour
1 tsp. baking soda
1/2 tsp. baking powder
2 c. crisp rice cereal (like Rice Krispies)
1 1/2 c. chopped nuts
1 c. flaked coconut
1 c. quick-cooking oats (do not use instant)
In a large mixing bowl, cream the shortening, peanut butter and brown sugar until light and
fluffy. Beat in the egg whites and vanilla. Combine the flour, baking soda and baking powder; gradually add to
the creamed mixture and mix well. Stir in the cereal, nuts, coconut and oats. Drop by rounded tablespoonfuls 2
inches apart onto ungreased baking sheets. Flatten with a fork, forming a criss-cross pattern. Bake at 375 degrees
for 7 to 8 minutes. Remove to wire racks to cool. Makes 12 dozen.
