2 c. sugar
1 T. pumpkin pie spice
1 tsp. baking soda
1/2 tsp. salt
2 eggs
1/2 c. vegetable oil
1 (15 oz.) can solid-pack pumpkin
2 c. chopped apples
1/2 c. shelled sunflower seeds (optional)
powdered sugar
Preheat oven to 350 degrees. Grease 24 muffin pan cups or use paper baking cups. In a large
bowl combine the flour, sugar, pumpkin pie spice, baking soda and salt. In a medium bowl, beat the eggs and oil with
a wire whisk until blended. Whisk in the pumpkin until the mixture is smooth. Stir in the apples and sunflower
seeds. Add the pumpkin mixture to the flour mixture. Stir just until moistened. Spoon into the muffin cups
filling 3/4 full. Bake 35 to 40 minutes or until an inserted toothpick comes out clean. Remove to a wire rack.
Sprinkle with the powdered sugar. Makes 2 dozen.
