2/3 c. milk
2 c. biscuit baking mix
3 medium tomatoes, peeled and sliced 1/4-inch thick
1 medium onion, minced
2 T. butter
3/4 c. sour cream
1/3 c. mayonnaise
1 c. grated Cheddar cheese
3/4 tsp. salt
1/4 tsp. pepper
1/4 tsp. leaf oregano
pinch of sage

Preheat the oven to 400 degrees. Butter a 9 x 13-inch baking pan. Stir the milk into the biscuit
mix to make a soft dough. Turn the dough out onto a well-floured board and knead lightly 10 to 12 strokes. Pat
the dough over the bottom of the buttered baking pan, pushing the dough up the sides, to form a shallow rim. Arrange
the tomato slices over the dough. Sauté the onion in the butter until tender and blend in the sour cream, mayonnaise,
cheese, salt, pepper, oregano and sage. Spoon the sour cream mixture over the tomatoes and sprinkle with paprika.
Bake for 35 minutes. Let stand for 10 minutes before cutting.
