1 c. sugar
2 eggs
1 c. chopped dates
1 c. flaked coconut
1 c. finely chopped pecans
1 tsp. vanilla
1/2 tsp. almond flavoring
additional sugar for coating
15 maraschino cherries, cut in half
Mix the 1 c. of sugar and the eggs in a 2-qt. casserole dish; mix in the dates, coconut, pecans, vanilla
and almond flavoring. Bake in a preheated 350 degree oven for 30 minutes, stirring the mixture every 10 minutes.
Let cool to room temperature. Roll the mixture into scant 1-inch balls; coat with sugar. Make an indentation into
each candy with your finger; press the cherries into the indentations. Refrigerate until serving time. Makes about
30 pieces.
