2 egg whites
1 c. brown sugar, packed
1 c. butterscotch chips
1/2 c. chopped nuts
1 tsp. vanilla
Beat the egg whites until soft peaks form; add the brown sugar gradually and beat until stiff. Fold
in the butterscotch chips, chopped nuts and vanilla. Drop onto an ungreased cookie sheet and put into a preheated 350
degree oven. Turn the heat off and leave the cookies in the oven overnight. Makes 2 dozen.
