1/4 c. butter or margarine
1 c. chopped green pepper
1 c. chopped onion
1/2 c. chopped celery
1 (10 3/4 oz.) can cream of mushroom soup
1 (10 oz.) pkg. frozen chopped broccoli
1 (8 oz.) jar jalapeño cheese spread (like Cheez Whiz Salsa Con Queso)
2 c. cooked rice
Sauté the green pepper, onion and celery in the butter or margarine for 10 minutes. Add the mushroom
soup and water. Simmer until the pepper is tender. Add the broccoli and simmer for 10 minutes. Stir in the
rice and the cheese spread; pour into a buttered pan. Bake at 350 degrees for 25 minutes. (The Offuttaires are
a choral group made up of women whose husbands are stationed at Offutt Air Force Base in Bellevue, Nebraska, and this recipe
shows up quite often at their potluck dinners.)
