1 1/3 c. finely crushed vanilla wafer crumbs
1 c. sugar, divided
3/4 c. butter or margarine, divided
2 oz. unsweetened chocolate
1 (4 oz.) bar German sweet chocolate
3 eggs
1 1/4 tsp. mint flavoring, divided
1 c. whipping cream, whipped
2 T. powdered sugar
Melt 1/4 c. of the butter or margarine and combine it with the vanilla wafer crumbs and 1/4 c. of the sugar.
Press the mixture into a 9-inch pie plate. Bake in a 375 degree oven for 5 or 6 minutes. Put the unsweetened chocolate
and the German sweet chocolate in the top of a double boiler to melt. Cream the remaining 1/2 c. of butter or margarine
and the remaining 3/4 c. of sugar together until the mixture is as smooth as whipped cream. Add the eggs that have been
beaten until they are extremely light and frothy. Add the melted chocolate and stir until very smooth. Lastly,
add 1 tsp. of the mint flavoring and stir well. Turn into the cooled crumb crust. When firm, cover with the whipped
cream to which you have added the powdered sugar and the remaining 1/4 tsp. of mint flavoring.
