1 lb. ground beef
1/4 c. chopped onion
3/4 tsp. salt, divided
1/4 tsp. pepper
2 (6 oz.) cans whole green chiles, cut in half
1 1/2 c. shredded Monterey Jack cheese
1/4 c. flour
4 eggs, beaten
1 1/2 c. milk
1/4 tsp. hot pepper sauce
Brown the ground beef and onions. Drain any excess fat. Sprinkle with 1/2 tsp. of the salt and
the pepper. Place 1/2 of the green chilies in a greased or sprayed 6 x 10-inch casserole dish. Sprinkle with the
cheese. Top with the meat mixture. Arrange the remaining green chilies over the meat. Mix the flour and
the remaining 1/4 tsp. salt in a bowl. In another bowl, combine the beaten eggs, milk and hot pepper sauce. Stir
in the flour mixture gradually. Pour over the casserole. Bake at 350 degrees for 45 to 50 minutes.
