6 slices bacon, cut into small pieces
2 tsp. flour
2 T. water
1/4 c. vinegar
3 T. sugar
1/8 tsp. pepper
3 c. sliced cooked potatoes
1/2 c. diced onion (preferably green onions)
Fry the bacon until it is crisp and drain on a paper towel. Stir the flour into the bacon drippings.
Add the water, vinegar, sugar and pepper. Cook, stirring constantly, until slightly thickened; pour over the potatoes.
Keep warm until time to serve. Just before serving, toss with the bacon bits and the onion.
