3/4 c. instant rice (like Minute Rice)
1/4 tsp. salt
1 1/4 c. boiling water, divided
1/2 c. sugar
1 (3 oz.) pkg. wild strawberry gelatin
1 (8 oz.) can crushed pineapple, undrained
1 (8 oz.) container frozen whipped topping, thawed
grated Cheddar cheese (optional)
Combine the rice, salt, and 3/4 c. of the boiling water; set aside. Combine the sugar and the remaining
1/2 c. of boiling water, then stir in the gelatin. When the gelatin has dissolved, add the undrained pineapple and the
rice. Refrigerate until partially set, then fold in the whipped topping. Spoon into an 8-inch square pan.
Top with the grated cheese, if desired. Chill until time to serve.
