1 (4 oz.) pkg. chipped beef
1/4 c. butter
3 T. chopped onion
3 T. flour
1 c. milk
1 c. shredded Cheddar cheese
1 c. sour cream
1 (4 oz.) can mushrooms, drained
salt and pepper to taste
Cut the chipped beef into strips. Melt the butter; add the beef and onion and cook until the onion
is transparent. Add the mushrooms and cheese. Blend in the flour; add the milk, stirring constantly. Add
the sour cream just before serving. Salt and pepper to taste. Serve on toast or English muffins. Serves
6 to 8.
