1 1/4 c. applesauce
1 c. sugar
1/2 c. vegetable oil
2 eggs
3 T. milk
2 c. sifted flour
1 tsp. baking soda
1/2 tsp. baking powder
1 tsp. ground cinnamon, divided
1/4 tsp. salt
1/4 tsp. ground nutmeg
1/4 tsp. allspice
3/4 c. chopped pecans, divided
1/4 c. brown sugar
In
a mixing bowl, thoroughly combine applesauce, sugar, oil, eggs and milk. Sift together flour, baking soda, baking powder,
the first 1/2 tsp. cinnamon, salt, nutmeg and allspice. Stir into applesauce mixture; beat well. Fold in the 1/2 c. pecans;
turn into a well-greased loaf pan. Combine the brown sugar, 1/4 c. pecans and the remaining 1/2 tsp. cinnamon. Sprinkle over
batter. Bake at 350 degrees for 1 hour or until done.
