1/2 large or 1 medium unpeeled zucchini, chopped or cubed
2 c. whole-wheat bread cubes
1/2 c. butter or margarine
1 large onion, chopped
2 T. parsley
dash of garlic powder
1 1/2 tsp. dill weed
1 c. cubed Cheddar cheese
1 c. cubed Mozzarella or Colby cheese
salt and pepper
1 c. grated Cheddar cheese
Brown the bread cubes and onion in the butter or margarine until the bread is toasted. Mix together
all of the ingredients except the grated Cheddar cheese. Place in a 2-qt. greased or sprayed casserole dish. Sprinkle
the top with the grated Cheddar cheese. Bake at 350 degrees for 30 to 40 minutes, or until all of the cheese melts.
