12 slices bacon
6 slices process cheese (like Velveeta Slices)
8 beaten eggs
1 c. milk
1/2 c. mushrooms (optional)
1 T. chopped onions (optional)
Cook the bacon; drain. Chop four slices, leaving the remaining slices whole. Arrange the cheese
slices on the bottom of a lightly buttered 9-inch pie pan or casserole dish. Beat together the eggs and milk; add the
chopped bacon. Pour over the cheese slices and bake in a preheated 350 degree oven for 30 minutes. Arrange the
whole slices of bacon on top of the omelet; bake 10 minutes longer. Let stand 5 minutes before serving.
