1 c. vegetable oil
2 eggs
2 c. sugar
2 c. sifted flour
1 tsp. baking soda
1 tsp. salt
2 tsp. ground cinnamon
1 tsp. ground nutmeg
5 c. sliced or chopped apples
1 c. chopped pecans
3 T. lemon juice
Beat the oil and eggs together until well blended. Add the sugar. Sift the flour, baking soda,
salt, cinnamon and nutmeg together. Add to the oil mixture. Mix thoroughly. Stir in the apples and the chopped
nuts. (The batter will be very thick; more like cookie dough than cake batter.) Turn into a greased and floured
9 x 13-inch baking pan. Sprinkle the lemon juice over the batter. Bake at 350 degrees for 1 hour, or until the
cake tests done. Cool and frost with a cream cheese icing.
