1 large cantaloupe, cut into cubes or balls
1 large bunch seedless white grapes
1 (28 oz.) can pineapple chunks
4 large bananas, sliced
1/3 c. sugar
2 T. cornstarch
1/2 tsp. salt
1 c. pineapple juice
1/4 c. lemon juice
1 egg
2 T. water
1/2 tsp. lemon flavoring
Combine the cantaloupe, grapes, pineapple chunks and bananas in a large bowl. (The bananas may be
reserved until just before serving.) In a saucepan, combine the sugar, cornstarch and salt. Combine the remaining
ingredients and add to the mixture in the saucepan. Cook over low heat, stirring constantly, until thick. Cool
thoroughly. Stir gently into the fruit mixture. Chill. (maraschino cherries and English walnuts may be added
to give this an elegant appearance.) Serve on lettuce leaves with crispy crackers.
