1 c. orange juice
1 c. orange sections, cut in pieces
2 T. grated orange rind
1 c. sugar
5 T. cornstarch
3 egg yolks, beaten
2 T. lemon juice
2 T. butter or margarine
1 (9-inch) baked pie shell
Combine the orange juice, orange sections, orange rind, sugar and cornstarch. Cook over low heat until
clear. Add a little of the hot mixture to the beaten egg yolks. Pour back into the hot mixture and cook about
5 minutes longer. Remove from the heat. Blend in the lemon juice and butter or margarine. Pour into the
baked pie shell. (Be sure that the filling and the shell are either both hot or both cold.) Cover the filling
using your favorite meringue recipe. Bake at 350 degrees until the meringue is lightly browned.
