3 sweet potatoes
1 1/2 c. sugar
3 large eggs
1/4 c. butter
1/2 c. milk
1 (3 oz.) pkg. instant butterscotch pudding mix
Boil, drain and mash the sweet potatoes. In a large bowl, mix all of the ingredients together well.
Place in a buttered casserole dish. Bake at 325 degrees until nearly firm in the center. (NOTE: You can
also bake this in an unbaked 9-inch pie shell.)
