1 1/2 c. self-rising flour
2 c. peach ice cream, softened
1 egg, beaten
2 T. vegetable oil
jimmies and colored sugar
Place the flour in a mixing bowl; stir in the ice cream, egg and oil until just moistened. Fill greased
or paper-lined muffin cups 3/4 full with the batter; bake at 425 degrees for 15 to 20 minutes. Sprinkle with jimmies
or colored sugar while warm. Makes 1 dozen.
