3 1/2 c. all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. ground cinnamon
1 tsp. ground allspice
4 eggs, lightly beaten
1/2 c. warm coffee
1/2 c. vegetable oil
1 (12 oz.) jar strawberry preserves
1 (16 oz.) jar honey
1/2 c. chopped nuts (optional)
Preheat the oven to 350 degrees. Grease a 9 x 5-inch loaf pan and line with wax paper.
Combine the flour with the baking powder, baking soda, cinnamon and allspice. Combine the beaten eggs, coffee and oil.
Beat in the strawberry preserves. Beat in the honey. Beat in the flour mixture and add the nuts, if desired.
Pour into the prepared loaf pan and bake 1 hour, until done.
