4 slices bacon, diced
3 c. raw spinach
3 T. flour
1 1/2 c. hot water
2 T. sugar
1 1/2 T. vinegar
1/2 tsp. butter flavoring
salt and pepper to taste
2 hard-boiled eggs, sliced
Fry the diced bacon until it is crisp. Add the spinach.
Stir over medium heat until the spinach is wilted. Remove the bacon and spinach and place in a serving bowl. Stir
the flour into the drippings in the skillet; cook over medium heat, stirring constantly, until the mixture is smooth and well
blended. Gradually stir in the hot water and continue cooking, stirring, until thick. Add the sugar, vinegar,
butter flavoring, salt and pepper. Pour the mixture over the spinach. Garnish with the slices of hard-boiled eggs.
