2 c. sifted flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/4 tsp. salt
1 c. puréed pumpkin
2 eggs
1/4 c. root beer
3/4 c. sugar
1/4 c. plain yogurt
3/4 c. chopped walnuts
1 T. melted butter
In a large bowl, mix the flour, baking soda, baking powder, cinnamon, nutmeg and salt. In another
bowl, beat the eggs and add the pumpkin, root beer and sugar. Beat until smooth; stir in the yogurt. Add the flour
mixture, a little at a time, beating until smooth after each addition. Fold in the walnuts and melted butter.
Pour into a greased 9 x 5-inch loaf pan. Bake at 350 degrees for 1 1/2 hours. (There is a lot of liquid in this
recipes, so it requires a longer baking time.)
