2 T. butter
2 T. flour
1/8 tsp. salt
1/2 c. evaporated milk
1 1/2 c. shredded coconut
36 vanilla wafers
Melt the butter in a double boiler over boiling water. Blend in the flour and the salt. Slowly
stir in the evaporated milk. Cook until thick and smooth, stirring constantly. Add the marshmallows. Continue
cooking while stirring until the marshmallows are melted. Remove from the heat and fold in the coconut. Cool thoroughly.
Spread the mixture on the flat sides of 18 vanilla wafers. Cover with the remaining 18 vanilla wafer putting the flat
sides of the wafer next to the filling.
