2 c. diced okra, divided
1 small onion, sliced
1/2 c. tomatoes, sliced or diced
2 slices bacon
1/2 c. bread crumbs, divided
1 T. Worcestershire sauce
2 eggs, beaten
salt and pepper to taste
Fry and crumble the bacon. Place 1 c. of the okra in the bottom of an oiled casserole dish; sprinkle
with 1/2 of the bread crumbs, and a little salt and pepper to taste. Follow with the remaining cup of okra, the sliced
onions and the tomatoes. Then sprinkle with the remaining bread crumbs and salt and pepper to taste. Pour the
beaten eggs over all and top with the crumbled bacon. Bake at 325 degrees for 1 hour. (Do not overcook; just so
the okra is done and the top is light brown.) Serves 6. (Thyme, seasoned salt or Greek spices may be added to
each layer.)
