1 (8 oz.) can crushed pineapple, drained
1 (3 oz.) pkg. orange gelatin
1 tsp. coconut flavoring
1/2 c. mayonnaise or salad dressing
1/2 c. grated sharp Cheddar cheese
1/2 c. chopped pecans
8 to 10 red and green maraschino cherries, chopped
Drain the juice from the pineapple into a 2-cup measure. Add enough water to make 2 full cups.
Bring the liquid to a boil. Dissolve the gelatin in the boiling liquid. Cool to room temperature. Add the
coconut flavoring and the mayonnaise or salad dressing. Beat well with an electric mixer. Fold in the pineapple,
cheese, pecans and cherries. Pour into a mold or an 8-inch sqaure pan. Refrigerate until firm.
