1 (12 to 14 lb.) fresh ham
1/4 c. butter
1 c. chopped onion
3 cloves garlic, minced
7 c. soft bread crumbs (crusts removed)
2 large unpeeled apples, diced
1 c. chopped celery
1/2 c. chopped parsley
1 T. salt
1/2 tsp. black pepper
2 tsp. sage
1 tsp. thyme
1/8 tsp. lemon flavoring
1/4 tsp. butter flavoring
Remove the bone from the ham making a cavity for the stuffing. Remove the skin from the ham.
Preheat the oven to 325 degrees. Melt the butter in the skillet and sauté the onion and garlic until tender, but not
brown. In a large bowl, mix the sautéed onion and garlic with the bread crumbs, apples, celery, parsley, salt, pepper,
sage, thyme, and lemon and butter flavorings. Pack the stuffing into the ham cavity. Fasten with skewers.
Place the ham, fat side up, in a roaster. Bake for 35 minutes per pound weight of the ham. Serves 15 to 20.
