1 (12 oz.) pkg. maple-flavored sausage, crumbled
2 c. sliced mushrooms
1 (28 oz.) pkg. frozen potatoes O'Brien
6 to 8 eggs, beaten
shredded Cheddar cheese
Brown the sausage with the mushrooms in a 10-inch skillet; drain and set aside. Cook the potatoes
until golden; add in the eggs. Stir and heat until the eggs are scrambled; add the sausage and mushroom mixture.
Spoon into plates; garnish with the cheese. Serves 4.
